    EDITORIAL FOREWORD

    The Libyan Society of Food and Nutrition, affiliated with the Libyan Scientific Research Center ‎at the Ministry of Higher Education, is pleased to announce to researchers that, by the grace of ‎Allah, the first issue of the fourth volume 2023 of the Libyan Journal of Food and Nutrition has ‎been published. This comes after the successful conclusion of the Second International ‎Conference on Food and Nutrition, held in December 2023 at the College of Medical ‎Technology, Nalut University, under the theme "Food Processing and Safety: Consumer ‎Protection between Reality and Ambition." The issue includes some of the scientific papers ‎presented at the conference after they were refereed and evaluated. ‎        In order to avoid delays in publication, the Editorial Board of the journal decided to publish ‎accepted and ready-to-publish papers electronically on the journal's website on a rolling basis. ‎The papers will be assigned their final and approved volume numbers in this issue. Once the ‎required number of papers for the issue is complete, it will be compiled and published ‎electronically and in print. ‎      The Libyan Journal of Food and Nutrition continues to shine a light on the fields of food science ‎and nutrition, illuminating the path for researchers, professors, PhD students, master's students, ‎and researchers in research centers and those interested in food and nutrition. We would like to ‎emphasize that the journal will remain committed to its objectivity and distinctiveness in terms of ‎the content published through it by following scientific standards in the evaluation and ‎publication of research. It will also remain committed to its mission as one of the most important ‎scientific and research journals in the fields of food science and nutrition. ‎    The journal is one of the goals of the Society that was achieved, with the grace of Allah, with the ‎convening of the first international conference in 2021 in Tripoli and the second international ‎conference in 2023 in Nalut. The Society is continuing its future plans to prepare for the third ‎international conference in 2025 at faculty of food science, Wadi Alshati University in Brak city. ‎     The Editor-in-Chief seizes this opportunity to express his pride that the journal has not ceased ‎publication and that he has accompanied it since the issuance of its very first issue. This effort is ‎not attributed to the editor-in-chief alone, but is also the effort of those responsible for the ‎journal. This effort comes in light of these circumstances in response to the keenness of our ‎colleagues to continue giving and serving scientific research. ‎      Finally, the Editorial Board of the journal would like to express its sincere thanks and gratitude ‎to all who contributed to the accomplishment of this issue, especially the researchers, professors, ‎reviewers, the scientific committee, the graphic designer of the issue, the expert professors in the ‎advisory board, and the journal secretary who wrote, read, evaluated, and submitted the research. ‎Their efforts have contributed to achieving the vision of the journal's goals and their unlimited ‎support to promote it to compete with other scientific journals in the same field.‎

    EDITORIAL FOREWORD

    The Libyan Society for Food and Nutrition (affiliated to the Libyan Authority for Scientific Research at the Ministry of Higher Education) is pleased to announce to the researchers that, with Allah’s grace and success, the third volume of issue one of the “Libyan Journal of Food and Nutrition” has begun.  In the interest of the editorial board not to prolong and delay the publication, it was decided to publish the accepted and ready-to-publish research papers electronically on the journal's website with the final and approved numbering of the volume in each issue.  Then, after completing the issue, it will be compiled and published electronically and on paper.     The flame of the "Libyan Journal of Food and Nutrition" continues to accompany researchers specialized in the fields of food and nutrition sciences, illuminating their path, whether they are professors, master's students, doctoral students, or researchers in research centers or scientific institutions in the country. The journal also has a positive impact on the progress of the Libyan Society for Food and Nutrition in achievement most of its objective by supporting scientific research and encouraging researchers.      Praise be to Allah, we have seen a lot of interest and support from readers and researchers since the first release of this scientific journal, as it seeks to occupy an important and prestigious position like other scientific journals, whether paper or electronic, or both, in introducing higher education institutions and various scientific research centers in the Libyan state, for what it contributes It encourages the production and dissemination of knowledge among interested researchers and stakeholders.      In conclusion, the editorial board of the journal extends its sincere thanks and gratitude to everyone who contributed to the completion of this issue, especially the researchers, the refereed professors, the scientific committee, the editorial board, the secretary, the technical designer of the issue, and the expert professors in the advisory board for their great interest and efforts that contributed to achieving the vision and goals of the magazine.Unlimited determination and persistence to raise the journal to compete with other scientific journals in the same field were obvious from everyone.

    EDITORIAL FOREWORD

    Praise be to Allah who taught man what he never knew and may the blessings and peace upon the most honored of messengers. The Libyan Journal of Food and Nutrition launched two years ago, and which founded under sponsorship of Libyan Association of Food and Nutrition which has been established by a decision of Libyan Scientific Research Authority number 15 for the year 2009 under declaration Number 100 as a scientific research Association. It is pleasure for the Journal Editorial Board to put in your hands the second edition of Libyan Journal of Food and Nutrition and we hope this edition will get satisfaction of our readers and good admiration; and we pray to Allah almighty to help us to serve more science and spreading   knowledge ;and We thank everyone who helped us publish this issue .We present this issue which include studies in the field of food and nutrition which could constitute an important link in the research chain for the valued readers to deepen their knowledge and support the sources of their research especially it is issued in the form of an electronic journal , which allows it, Allah willing ,a wider spread and faster interaction among researchers and honorable readers. We hope from honorable researcher who are willing to publish their research in the journal in Arabic or English language in its next editions should select it in terms of quality and should be written according to the research writing guide for this journal and feel the role they play; knowing that the scientific research accepted for publication is subject to evaluation and arbitration, and is also subject to the conditions of normal publication in international scientific journals. This journal has special page on the internet ,through which it can present research and communicate with the editorial board .And in order to keep pace with the latest developments at the levels of scientific journals, some members of the journal's editorial board participated during this year ,participated in the workshop on the new slate  through the Zoom application on date 6\2\2021 in which everything related to the new regulation for the accreditation of journals was reviewed and clarified ,and all questions were answered in particular.  Also, participation in the interactive meeting on the Libyan platform for referred scientific journals was attended, which was held on 14 \12\ 2021 via zoom application. I, and the members of the editorial board, are pleased to extend our thanks to all researchers whom their researches were accepted in the second volume, and the researchers whose publications who were not able to publish and who wrote for purpose of subscribing or obtaining the first issue. Finally, I would like to extend my thanks and gratitude to everyone who contributed and worked to publish this issue.
