Assessment the level of nutritional awareness regarding oils and fats and their health effects among a sample of consumers in the city of Benghazi
Abstract
The Edible oils and fats are essential components of the daily diet, but their misuse, especially in repeated frying, leads to the formation of harmful oxidized compounds. This study aimed to assess the level of awareness, knowledge, and self-reported behaviors of a sample of consumers in Benghazi regarding edible oils and fats. The study focused on the effects of frying with vegetable oils on human health. A descriptive-analytical approach was used, and a questionnaire was distributed to collect field data. The field study included 400 male and female participants of different age groups residing in various areas of Benghazi. The results showed an urgent need to raise nutritional awareness among the population about the risks of reusing oils, and to spread knowledge of healthy practices for handling and storing edible oils and fats. The study recommends intensifying health awareness programs and supervising the handling of edible oils and fats in local markets.
